Ingredients

  • 1/2 lb. ground pork sausage
  • 1 medium onion, chopped
  • 2 c. frozen shredded potatoes, thawed
  • 1 tsp. salt, divided
  • 6 eggs, slightly beaten
  • 1/4 c. milk
  • 1/8 tsp. pepper
  • 1/4 tsp. dried thyme
  • 1/8 tsp. ground sage

Instructions

  1. Microwave sausage and onion, uncovered, in a shallow, 2-quart casserole on High for 4 to 5 minutes, or until sausage is no longer pink. Stir twice during cooking.
  2. Remove sausage and onion from dish with a slotted spoon and drain on paper towel.
  3. Add potatoes to the casserole with the sausage drippings and microwave, covered, until potatoes are cooked, about 5 to 6 minutes.
  4. Stir in 1/4 teaspoon salt and spread potatoes evenly in the dish.
  5. Combine eggs, milk, remaining salt, and pepper in a 2-cup measure.
  6. Pour the egg mixture evenly over the potatoes.
  7. Mix sausage mixture with thyme and sage in a small bowl and sprinkle over the potatoes.
  8. Microwave, uncovered, on High for 3 minutes.
  9. Lift eggs at the edge with a spatula to distribute the uncooked portion of the egg mixture evenly. Do not stir potatoes and sausage.
  10. Microwave, uncovered, at 50% power (Medium) until eggs are almost set, about 8 to 10 minutes. Give the dish a 1/4 turn twice during cooking.

Tips & Substitutions

For a quicker prep, you can use pre-cooked sausage or substitute with turkey sausage for a leaner option. Feel free to add vegetables like bell peppers or spinach to enhance flavor and nutrition. If you prefer a creamier texture, consider adding shredded cheese on top before microwaving the eggs. Remember to keep an eye on the cooking times, as microwaves vary.

Serving Suggestions

This hearty breakfast pairs wonderfully with fresh fruit or a light salad, such as Pea And Peanut Salad, for a refreshing balance. Serve with toast or biscuits for a complete meal. For a special touch, drizzle hot sauce or serve with your favorite condiment to enhance the flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in the microwave on medium power for 1-2 minutes, or until heated through. You can also enjoy it cold or at room temperature for a convenient breakfast option.

Frequently Asked Questions

Can I use fresh potatoes instead of frozen?

Yes, you can use fresh potatoes; just peel, cube, and cook them before adding to the dish. Be sure to adjust cooking times accordingly as fresh potatoes may take longer to soften in the microwave.

What if I don't have thyme or sage?

If you lack thyme or sage, you can replace them with Italian seasoning or even a pinch of dried rosemary for a different flavor profile. Experiment with herbs you enjoy, as they can add unique tastes to the dish.

Can I make this dish ahead of time?

Absolutely! Prepare the dish up to the point of microwaving the eggs, cover it, and refrigerate overnight. In the morning, simply microwave until heated through, making it a great option for busy mornings.
