Sweet and crunchy microwave Cracker Jack with caramel and peanuts, perfect for snacking and sharing, combining popcorn, caramel, and salty nuts for a nostalgic treat.

Ingredients

  • 12 cups popcorn
  • 1/2 cup butter
  • 1/4 cup light corn syrup
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 can salted peanuts
  • 1/4 teaspoon baking soda

Instructions

  1. Pop the popcorn, then put this popcorn in a large brown paper bag.
  2. Mix together in a 4-cup glass measuring cup the butter, corn syrup, brown sugar, salt, and peanuts.
  3. Microwave on High for 4 minutes.
  4. Add baking soda and vanilla to the mixture and stir well.
  5. Immediately pour the caramel mixture over the popped corn in the paper bag.
  6. Shake the bag well to coat the popcorn evenly.
  7. Microwave on High for 1 1/2 minutes.
  8. Shake the bag and microwave again for another 1 1/2 minutes.
  9. Shake once more and pour the mixture out onto a cookie sheet to cool.
  10. Break apart the cooled mixture and enjoy.
