Ingredients

  • 1/2 cup butter
  • 1 cup flour
  • 1/4 cup powdered sugar
  • 3 eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon rind
  • 1/2 teaspoon baking powder
  • 1 cup sugar

Instructions

  1. Combine butter, 1 cup flour, and powdered sugar and cut into fine crumbs with a fork.
  2. Press the mixture into the bottom of a 9-inch square pan.
  3. Microwave on High for 3 to 4 minutes or until the surface looks dull.
  4. Mix eggs, lemon juice, lemon rind, baking powder, sugar, and remaining flour.
  5. Pour the lemon mixture over the baked crust.
  6. Cover with plastic wrap and microwave on 70% power for 5 to 7 minutes or until set, about 1 inch from the center.
  7. Cool, covered, on the countertop.
  8. Sprinkle the top with powdered sugar and cut into bars.
