Ingredients

  • 2 pkg. cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 2/3 cup Dole unsweetened pineapple juice
  • 1/2 cup whipping cream
  • 2 cups flour
  • 2/3 cup margarine

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix 2 cups flour, 2/3 cup margarine, 1/2 cup finely chopped toasted almonds, and 1/2 cup powdered sugar until crumbly.
  3. Press the mixture into a 13 x 9-inch pan to form the crust.
  4. Bake the crust for 15 to 20 minutes until golden.
  5. In a mixing bowl, beat 2 pkg. cream cheese and 1/2 cup sugar until smooth.
  6. Add 2 eggs, one at a time, beating well after each addition.
  7. Stir in 2/3 cup Dole unsweetened pineapple juice.
  8. Whip 1/2 cup whipping cream until stiff peaks form.
  9. Fold the whipped cream into the cream cheese mixture.
  10. Pour the cream cheese mixture over the baked crust.
  11. Chill in the refrigerator for at least 2 hours before serving.
