- Preheat oven to 350°F (175°C).
- Mix 2 cups flour, 2/3 cup margarine, 1/2 cup finely chopped toasted almonds, and 1/2 cup powdered sugar until crumbly.
- Press the mixture into a 13 x 9-inch pan to form the crust.
- Bake the crust for 15 to 20 minutes until golden.
- In a mixing bowl, beat 2 pkg. cream cheese and 1/2 cup sugar until smooth.
- Add 2 eggs, one at a time, beating well after each addition.
- Stir in 2/3 cup Dole unsweetened pineapple juice.
- Whip 1/2 cup whipping cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Pour the cream cheese mixture over the baked crust.
- Chill in the refrigerator for at least 2 hours before serving.
