- Prepare manicotti shells according to package directions and drain.
- Combine ricotta cheese, shredded mozzarella, Parmesan cheese, chopped parsley, garlic salt, and pepper in a bowl.
- Fill each manicotti shell with about 1/3 cup cheese mixture, splitting shells if needed.
- Arrange filled shells in a 7 x 11-inch baking dish.
- In a medium pan, cook sliced mushrooms covered on high for 2 to 3 minutes until tender-crisp.
- Drain and discard liquid from mushrooms.
- Stir mushrooms into the spaghetti sauce.
- Spoon the sauce over the filled shells.
- Shield the two long sides of the baking dish with 2-inch wide strips of smooth foil (optional).
- Cook covered on high for 8 minutes, then discard foil and rotate the dish.
- Cook covered for an additional 4 to 6 minutes until hot and bubbling.
- Let stand covered for 5 minutes before serving.
