Ingredients

  • 8 manicotti shells
  • 1 15 oz. container ricotta cheese
  • 1 4 oz. shredded mozzarella cheese
  • 3 Tbsp. grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/4 tsp. garlic salt
  • 1/4 tsp. pepper
  • 1/2 lb. sliced mushrooms
  • 1 14 to 16 oz. jar spaghetti sauce

Instructions

  1. Prepare manicotti shells according to package directions and drain.
  2. Combine ricotta cheese, shredded mozzarella, Parmesan cheese, chopped parsley, garlic salt, and pepper in a bowl.
  3. Fill each manicotti shell with about 1/3 cup cheese mixture, splitting shells if needed.
  4. Arrange filled shells in a 7 x 11-inch baking dish.
  5. In a medium pan, cook sliced mushrooms covered on high for 2 to 3 minutes until tender-crisp.
  6. Drain and discard liquid from mushrooms.
  7. Stir mushrooms into the spaghetti sauce.
  8. Spoon the sauce over the filled shells.
  9. Shield the two long sides of the baking dish with 2-inch wide strips of smooth foil (optional).
  10. Cook covered on high for 8 minutes, then discard foil and rotate the dish.
  11. Cook covered for an additional 4 to 6 minutes until hot and bubbling.
  12. Let stand covered for 5 minutes before serving.
