Ingredients

  • 12 oz. can evaporated milk
  • 3/4 cup sugar
  • 1/2 cup Bisquick
  • 2 Tbsp. margarine
  • 2 eggs
  • 16 oz. can pumpkin
  • 2 1/2 tsp. pumpkin pie spice
  • 2 tsp. vanilla

Instructions

  1. Combine all ingredients and beat for 2 minutes.
  2. Pour the mixture into a 9-inch pan.
  3. Microwave uncovered on High for 6 to 8 minutes until edges are set.
  4. Then microwave for an additional 4 to 6 minutes until the center is set.
  5. Let cool before serving.
