Ingredients

  • 2 1/2 cups prunes
  • 3/4 cup sugar
  • 1/4 cup water
  • 2 cups sifted flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup butter or oleo
  • 1 cup sugar
  • 1 1/2 cups flaked coconut

Instructions

  1. Cook prunes, 3/4 cup sugar, and water together until tender.
  2. Sift flour, salt, and baking soda together.
  3. Cream butter, gradually adding 1 cup of sugar; beat well.
  4. Blend in dry ingredients.
  5. Stir in coconut.
  6. Press 3 cups of this mixture in the bottom and halfway up the sides of a greased 13 x 9 x 2-inch pan.
  7. Bake at 400°F (200°C) for 10 minutes.
  8. Spread prune mixture over crust and sprinkle the rest of the crumbs over the top.
  9. Bake for 20 to 25 minutes.
  10. Cool and cut into squares.
  11. Top with whipped cream before serving.
