Ingredients

  • 2 lb. red snapper fish (head removed)
  • 2 Tbsp. lemon juice
  • 1 Tbsp. water
  • 1/2 tsp. lemon pepper
  • 1/2 tsp. red pepper
  • 1/2 stick butter or oleo
  • 1/2 tsp. crab, shrimp seasoning
  • 1/2 tsp. seafood seasoning
  • 1/2 tsp. salt and pepper
  • 5 to 6 bay leaves
  • 1/2 tsp. thyme

Instructions

  1. In a saucepan over low heat, add lemon juice, water, and butter. Simmer until the butter is melted.
  2. Season the fish with lemon pepper, red pepper, crab/shrimp seasoning, seafood seasoning, salt and pepper, and thyme.
  3. Place bay leaves at the bottom of a medium microwave dish.
  4. Add the seasoned fish on top of the bay leaves and pour the lemon butter sauce over the fish.
  5. Cover the dish with a microwave-safe lid or plastic wrap.
  6. Let the fish stand for 5 to 10 minutes, then microwave for 10 to 12 minutes until cooked.
