Ingredients

  • 1 1/2 cup celery, chopped
  • 1 1/2 cup onion, chopped
  • 1/2 cup green onions, chopped
  • 3 cloves garlic, minced
  • 1/2 cup bell pepper, chopped
  • 4 Tbsp oil
  • 1 Tbsp flour
  • 1 can Ro-Tel tomatoes and chilies, chopped
  • 8 oz tomato sauce
  • 13 3/4 oz can chicken or beef broth
  • 2 lb raw, peeled shrimp
  • 1 tsp salt

Instructions

  1. Saute celery, onion, green onions, garlic, bell pepper, and oil in a 3-quart dish on high for 20 minutes until wilted.
  2. Stir in flour.
  3. Add chopped Ro-Tel tomatoes, tomato sauce, and chicken or beef broth.
  4. Cook on high for 10 minutes.
  5. Add shrimp, cover, and cook on high for 6 minutes or until shrimp are pink and tender, stirring once or twice.
  6. Let stand for 5 minutes before serving.
