Microwave stuffed cabbage rolls feature tender cabbage leaves filled with seasoned ground beef and rice, baked in a tangy tomato sauce—perfect for a hearty, quick meal.

Ingredients

  • 8 cabbage leaves
  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 1 teaspoon instant minced onion
  • 1 egg
  • 1/2 teaspoon poultry seasoning
  • 1 (8 oz) can tomato sauce
  • 1 1/2 teaspoons light brown sugar
  • 2 tablespoons lemon juice or vinegar
  • 2 tablespoons water

Instructions

  1. In a large saucepan on the stove, bring 6 cups of water and 1 teaspoon of salt to boiling.
  2. Add cabbage leaves and simmer about 2 to 3 minutes or just long enough to make leaves pliable.
  3. Drain leaves on paper towels.
  4. Put beef into a 1 1/2-quart glass baking dish.
  5. Cover with waxed paper.
  6. Cook in microwave oven 4 minutes at High or until meat is no longer pink, stirring occasionally.
  7. Add rice, onion, egg, and poultry seasoning to beef and mix.
  8. Divide meat mixture into 8 even portions.
  9. Cut the core out of each cabbage leaf.
  10. Place one portion of meat in the center of each cabbage leaf.
  11. Fold 2 sides of each leaf over the meat and roll up from the end.
  12. Arrange cabbage rolls, seam side down, in a 2-quart glass baking dish.
  13. Combine tomato sauce, brown sugar, lemon juice, and water in a small bowl.
  14. Pour the sauce over the cabbage rolls.
  15. Cover with waxed paper and cook in microwave oven 10 minutes at High or until heated.
  16. Rearrange once during cooking.
  17. Remove from oven, cover with plastic wrap, and let stand 10 minutes before serving.
