Ingredients

  • 3 eggs, separated
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 teaspoon grated lemon rind
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/8 teaspoon salt
  • whipped cream (optional)

Instructions

  1. In a small bowl, beat egg yolks with milk, lemon juice, and lemon rind.
  2. Add sugar, flour, and salt to the yolk mixture and beat until smooth.
  3. In another bowl, beat egg whites until stiff peaks form.
  4. Gently fold the yolk mixture into the beaten egg whites.
  5. Butter a 1-quart deep casserole dish.
  6. Pour the mixture into the prepared casserole.
  7. Place the casserole into a larger pan in the oven.
  8. Pour hot water into the larger pan to a 1-inch depth.
  9. Bake at 325°F for 30 to 40 minutes or until golden.
  10. Serve warm or cooled, garnished with whipped cream if desired.
