Ingredients

  • 1/2 cup salad dressing
  • 2 tablespoons milk
  • 1/2 teaspoon mustard
  • 1/2 pound smoked sausage, cut into 1/4-inch slices and halved
  • 3/4 cup yellow squash slices, halved
  • 1/2 cup green or red pepper strips
  • 1/2 cup green onion, sliced into 1-inch pieces

Instructions

  1. Mix together salad dressing, mustard, and milk until well blended; set aside.
  2. Combine sausage, peppers, and onions in a medium bowl.
  3. Microwave on High for 2 minutes.
  4. Stir in squash and microwave on High for an additional 2 minutes or until vegetables are crisp-tender.
  5. Add salad dressing mixture and mix lightly.
  6. Microwave on Medium (50%) for 2 to 3 minutes or until thoroughly heated, stirring after 2 minutes.
  7. Serve over rice.
