A savory zucchini casserole featuring tender zucchini, melted sharp cheese, and crispy bread crumbs, perfect for a comforting vegetarian main or side dish for family dinners.

Ingredients

  • 3 or 4 zucchini
  • 1/2 cup onion, chopped finely
  • 2 tablespoons margarine
  • 1 to 1 1/2 cups grated sharp cheese
  • Italian flavored bread crumbs

Instructions

  1. Wash and slice the zucchini not too thinly.
  2. Add very little water and salt, then parboil on low heat until tender.
  3. Drain the zucchini well.
  4. Put the zucchini back into the pot.
  5. Add margarine and chopped onions, then simmer until onions are soft.
  6. Transfer the mixture into a 12 x 8 x 2-inch Pyrex casserole dish.
  7. Sprinkle grated sharp cheese and Italian-flavored bread crumbs over the top.
  8. Dot with margarine.
  9. Bake at 350°F (175°C) for 20 minutes until bubbly and golden.
