- Wash and slice the zucchini not too thinly.
- Add very little water and salt, then parboil on low heat until tender.
- Drain the zucchini well.
- Put the zucchini back into the pot.
- Add margarine and chopped onions, then simmer until onions are soft.
- Transfer the mixture into a 12 x 8 x 2-inch Pyrex casserole dish.
- Sprinkle grated sharp cheese and Italian-flavored bread crumbs over the top.
- Dot with margarine.
- Bake at 350°F (175°C) for 20 minutes until bubbly and golden.
