  • 3 or 4 chicory leaves or dandelion greens, washed and torn
  • 1 bunch watercress, washed and stems removed

Instructions

  1. In a heavy 2 to 3-quart saucepan, bring 3/4 cup water and 1 teaspoon salt to a boil.
  2. Drop in the fiddleheads.
  3. Reduce heat to simmer (low) and partially cover the pan.
  4. Simmer for 2 minutes until the fiddleheads are barely tender and show slight resistance when pierced with a skewer or small knife.
  5. Drain the fiddleheads in a colander and run cold water over them to set their color and stop their cooking.
  6. Spread the fiddleheads on paper towels and pat dry.
