Ingredients

  • 5 c. flour
  • 1 c. sugar
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 1/2 c. butter flavoring or shortening
  • 2 large eggs
  • 1 c. milk
  • 2 c. ready to use mincemeat
  • 1 c. cranberries, chopped
  • 1 c. walnuts, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease 4 to 6 mini loaf pans.
  3. In a large bowl, combine flour, sugar, baking powder, and salt.
  4. Cut in shortening with a pastry blender or two knives until mixture resembles fine crumbs.
  5. Add eggs, milk, mincemeat, cranberries, and walnuts to the dry ingredients and mix until just combined.
  6. Pour batter into prepared mini loaf pans.
  7. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in pans for 10 minutes, then remove and cool completely before serving.
