Ingredients

  • 1 c. butter, softened
  • 2 c. sugar
  • 4 eggs, separated
  • 3 c. all-purpose flour
  • 1 Tbsp. baking powder
  • pinch of salt
  • 1 c. milk
  • 1 1/2 tsp. almond extract

Instructions

  1. Cream butter, gradually adding sugar until mixture is light and fluffy.
  2. Beat well after each addition.
  3. Add egg yolks one at a time, beating well after each addition.
  4. In a separate bowl, combine flour, baking powder, and salt.
  5. Gradually add flour mixture and milk to the creamed mixture alternately, beginning and ending with flour mixture. Mix well after each addition.
  6. Stir in almond extract.
  7. In a clean bowl, beat egg whites at room temperature until stiff peaks form.
  8. Gently fold egg whites into the batter.
  9. Spoon batter evenly into two greased and floured 8-inch pans.
  10. Bake at 350°F (175°C) for 45 minutes.
  11. Cool in pans for 10 minutes.
  12. Remove cakes from pans and cool completely.
  13. Frost the cake as desired.
