Ingredients

  • 4 large russet potatoes, boiled, peeled, and cubed
  • 9 pieces bacon, fried crisp and crumbled
  • 4 Tbsp oleo (butter or margarine)
  • 1/2 bell pepper, chopped
  • minced garlic, to taste
  • salt, to taste
  • pepper, to taste
  • 8 eggs, lightly beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter (oleo) in a skillet; add boiled, peeled, and cubed potatoes and chopped bell pepper; brown slightly.
  3. Add minced garlic, salt, and pepper to taste.
  4. Pour lightly beaten eggs over the potato mixture and cook until eggs form soft curds, stirring constantly.
  5. Mix in crumbled bacon.
  6. Sprinkle grated Cheddar cheese over the top.
  7. Place the skillet in the oven or under a broiler until the cheese is melted.
