Mini cream cheese cakes are creamy, tangy bites topped with sweet cherry or blueberry filling, perfect for parties or a delightful dessert for any occasion.

Ingredients

  • vanilla wafers
  • 3 (8 oz.) cream cheese
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 3/4 teaspoon vanilla
  • 3 eggs
  • 1 can Thank You brand cherry or blueberry filling

Instructions

  1. Place 1 vanilla wafer in each muffin cup.
  2. In a large bowl, add cream cheese, sugar, lemon juice, vanilla, and eggs, then mix well.
  3. Fill each muffin cup to half full with the cream cheese mixture.
  4. Bake for 20 to 25 minutes in a 325°F oven.
  5. Allow to cool.
  6. Add pie filling on top, chill, and serve.
