Miniature Cheese Cake

- Butter small muffin pans generously.
- Sprinkle crushed graham crackers until pans are well coated.
- Preheat oven at 350°F.
- In an electric mixer, beat soft cream cheese, sugar, and egg yolks until well blended.
- Beat egg whites until stiff peaks form and fold into the cheese mixture.
- Fill muffin tins 3/4 full with the mixture.
- Bake for 15 minutes. Cool and allow to fall.
- Mix sour cream with sugar and vanilla well.
- Put a dab of sour cream mixture on top of each muffin.
- Top with strawberry preserves or any fruit filling such as cherry, blackberry, etc.
- Bake at 400°F for 5 minutes.
- Allow to cool or chill as they will come out of pans easier.
- These freeze very well.
