Ingredients

  • 1 lb hot sausage
  • 3 cans (4 oz each) green chilies
  • 1 lb grated Cheddar cheese
  • 1 1/4 lb grated Monterey Jack cheese
  • 9 eggs
  • 1 cup milk
  • 2 Tbsp flour
  • paprika

Instructions

  1. Brown the hot sausage in a skillet.
  2. Drain excess fat from the sausage.
  3. Layer the cooked sausage, grated Cheddar, grated Monterey Jack, and green chilies in a 9 x 13-inch baking dish.
  4. In a bowl, beat the eggs, milk, and flour until well blended.
  5. Pour the egg mixture over the layered ingredients in the baking dish.
  6. Decorate the top with chili strips arranged in a lattice pattern.
  7. Sprinkle the top with paprika.
  8. Bake in a preheated oven at 350°F (175°C) for 40 minutes.
