Ingredients

  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 cup dried currants
  • 1/3 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1/2 cup milk
  • 6 tablespoons butter or margarine, melted

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a medium bowl, mix flour, baking powder, salt, nutmeg, and dried currants.
  3. In a separate bowl, beat softened butter or margarine with sugar until creamy.
  4. Add vanilla extract and egg to the butter mixture, mixing well.
  5. Gradually add milk, then combine with dry ingredients until just combined.
  6. Fill muffin cups about 2/3 full with batter.
  7. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool slightly before serving.
