Decadent mint chocolate cookies combine rich semi-sweet chocolate and refreshing mint flavor, perfect for chocolate lovers and holiday gatherings or anytime you crave a sweet treat.

Ingredients

  • 3 pkg. Andes mints
  • 3/4 cup butter or margarine
  • 1 1/2 cups brown sugar, packed
  • 2 tablespoons water
  • 12 oz. semi-sweet chocolate morsels
  • 2 large eggs
  • 2 1/2 cups flour
  • 1 1/4 teaspoons baking soda

Instructions

  1. Preheat oven to 350°F.
  2. Unwrap the Andes mints and set aside.
  3. In a saucepan, heat butter or margarine, brown sugar, and water.
  4. Add chocolate morsels and stir to partially melt.
  5. Remove from heat and continue to stir until melted.
  6. Pour into a bowl and let cool for 10 minutes.
  7. Beat in eggs at high speed.
  8. Add flour and baking soda, then blend well.
  9. Chill dough for 1 hour.
  10. Line a baking sheet with foil.
  11. Roll dough into small balls.
  12. Bake for 10 to 12 minutes.
  13. Remove from oven and place a mint on each cookie.
  14. Remove cookies to a cooling rack as the mint softens, then spread over the cookie to coat.
