Mint Chocolate Cookies

- Preheat oven to 350°F.
- Unwrap the Andes mints and set aside.
- In a saucepan, heat butter or margarine, brown sugar, and water.
- Add chocolate morsels and stir to partially melt.
- Remove from heat and continue to stir until melted.
- Pour into a bowl and let cool for 10 minutes.
- Beat in eggs at high speed.
- Add flour and baking soda, then blend well.
- Chill dough for 1 hour.
- Line a baking sheet with foil.
- Roll dough into small balls.
- Bake for 10 to 12 minutes.
- Remove from oven and place a mint on each cookie.
- Remove cookies to a cooling rack as the mint softens, then spread over the cookie to coat.
