Ingredients

  • 2 lb. fresh peas
  • 1 Tbsp. dry minced onion
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 Tbsp. mandarin peel in syrup
  • 1 sprig fresh mint
  • 1 Tbsp. butter

Instructions

  1. Shell the peas and combine them with minced onion, sugar, salt, mandarin peel, and mint sprig.
  2. Add a small amount of water, cover, and cook until the peas are barely tender.
  3. Ensure the water has evaporated when the peas are done. Remove the mint sprig.
  4. Toss the peas with butter and serve at once.
