Ingredients

  • 1/4 cup sugar
  • 1 cup butter
  • 2 cups flour
  • 1 cup coconut flakes
  • 1 cup chopped nuts
  • 6 oz raspberry jam
  • 2 eggs
  • 1 1/2 cups brown sugar
  • 3 tablespoons flour

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Blend sugar, butter, and flour to form a dough.
  3. Pat and press the dough into a 13 x 9-inch (33 x 23 cm) baking pan.
  4. Bake for 10 minutes and then cool.
  5. Spread the baked layer with raspberry jam.
  6. Mix coconut flakes, chopped nuts, brown sugar, eggs, and flour in a bowl.
  7. Spread this mixture over the jam layer.
  8. Bake in a 350°F (175°C) oven for 20 to 25 minutes.
  9. Cool completely and sprinkle with confectioners sugar before serving.
