Ingredients

  • 1 c. granulated sugar
  • 1/2 c. water
  • 1 Tbsp. light corn syrup
  • 1/8 tsp. salt
  • 6 marshmallows
  • 1/2 tsp. essence of peppermint
  • 3 c. walnut halves

Instructions

  1. Cook together slowly sugar, water, corn syrup, and salt.
  2. Remove from heat just before it reaches soft ball stage when a little is dropped in cold water at 230°.
  3. Add marshmallows (cut in pieces) and stir until they are melted.
  4. Add mint and nutmeats and stir with circular motion until every nut is coated with the mixture.
  5. Pour out onto wax paper.
  6. Separate nuts.
  7. Can be kept in a tightly covered jar for some time.
