Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 17 Ritz crackers
  • 2/3 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1/2 pint whipping cream

Instructions

  1. Add the sugar slowly to the beaten egg whites with the baking powder, folding gently until combined.
  2. Fold in the crumbled Ritz crackers and chopped walnuts, then add vanilla.
  3. Pour the mixture into a glass pie pan and bake at 350°F (175°C) for 35 minutes.
  4. Allow the pie to cool completely.
  5. Spread whipped cream over the cooled pie.
  6. Let stand overnight in the refrigerator before serving.
