Ingredients

  • 2 sticks butter
  • 1/2 cup shortening
  • 3 cups sugar
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 1/2 cup evaporated milk
  • 1/2 teaspoon almond extract

Instructions

  1. Cream butter and shortening together until smooth and fluffy.
  2. Gradually add sugar and continue to beat until well combined.
  3. Mix in about half of the flour along with the baking powder.
  4. Stir in the milk, evaporated milk, and the extracts (almond, coconut, and rum).
  5. Add the remaining flour and mix until just incorporated.
  6. Beat the mixture briefly until it becomes fluffy.
  7. Add eggs one at a time, beating well after each addition.
  8. Grease and flour a Bundt pan thoroughly.
  9. Pour the batter into the prepared pan and bake at 325°F (163°C) for 1.5 hours.
  10. Allow the cake to sit in the pan for 10 minutes after baking, then turn it out onto a cake plate.
  11. Let the cake cool completely before lightly sprinkling with powdered sugar.
  12. Garnish with fresh fruit before serving.
