Ingredients

  • 3 small squirrels
  • 3/4 cup oil
  • 1/4 cup lemon juice
  • 2 cups seasoned bread crumbs
  • 1/2 cup milk
  • 1 cup sliced mushrooms
  • 1/4 cup chopped onions
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 tablespoons bacon fat

Instructions

  1. Wash squirrels thoroughly and dry them.
  2. Cover the squirrels with a mixture of cooking oil and lemon juice.
  3. Let the squirrels stand for 1 hour.
  4. Combine seasoned bread crumbs with enough milk to moisten.
  5. Add all other ingredients, except bacon fat, to the bread crumb mixture.
  6. Stuff the squirrels with this mixture.
  7. Place the stuffed squirrels in a roaster and brush them with bacon fat.
  8. Roast, uncovered, at 325°F for 1 1/2 to 1 3/4 hours, basting every 15 minutes with drippings.
