- In a large skillet, cook bacon and chopped onion until bacon is crisp. Drain all but 1/2 cup of the drippings.
- Add thawed hash brown potatoes to the skillet; mix well.
- Cook over medium heat for 10 minutes, turning when browned.
- In a separate bowl, beat eggs with salt and pepper to taste.
- Push hash browns to the side of the skillet and pour in beaten eggs.
- Scramble eggs until cooked through, mixing with hash browns and bacon mixture.
- Sprinkle shredded Cheddar cheese on top (optional) and serve hot.
