Ingredients

  • 1 lb. sliced bacon, diced
  • 1 medium onion, chopped
  • 32 oz. frozen shredded hash brown potatoes, thawed
  • 10 eggs
  • salt and pepper to taste
  • 2 c. shredded Cheddar cheese (optional)

Instructions

  1. In a large skillet, cook bacon and chopped onion until bacon is crisp. Drain all but 1/2 cup of the drippings.
  2. Add thawed hash brown potatoes to the skillet; mix well.
  3. Cook over medium heat for 10 minutes, turning when browned.
  4. In a separate bowl, beat eggs with salt and pepper to taste.
  5. Push hash browns to the side of the skillet and pour in beaten eggs.
  6. Scramble eggs until cooked through, mixing with hash browns and bacon mixture.
  7. Sprinkle shredded Cheddar cheese on top (optional) and serve hot.
