Ingredients

  • 1/2 cup dried pitted prunes
  • 1/2 cup dried apricots
  • 1 cup apple juice
  • 1 stick cinnamon about 2 inches long
  • 1 tablespoon grated orange rind
  • 1 orange, peeled, sectioned, and chopped
  • 1 Granny Smith apple, peeled, cored, and chopped
  • 1 banana, sliced
  • 1/2 cup orange juice
  • 1 to 2 tablespoons brown sugar
  • 3 tablespoons chopped walnuts, toasted

Instructions

  1. Combine prunes and apricots in a bowl; set aside.
  2. Heat apple juice with cinnamon stick in a small saucepan over medium heat until hot.
  3. Pour the hot apple juice over the prunes and apricots.
  4. Cover and let stand for 8 hours.
  5. Remove the cinnamon stick and add orange rind, chopped orange, chopped apple, sliced banana, orange juice, and brown sugar; toss gently.
  6. Sprinkle with toasted chopped walnuts before serving.
