Ingredients

  • 4 qt. cucumbers, thinly sliced
  • 1 qt. onions, thinly sliced
  • 1 green pepper, sliced
  • 3 c. cauliflower, broken into small pieces
  • 3 cloves garlic, minced (optional)
  • 5 carrots, thinly sliced
  • 1/2 c. plain salt
  • 4 c. sugar
  • 3 c. vinegar
  • 1 Tbsp. turmeric

Instructions

  1. Combine cucumbers, onions, green pepper, cauliflower, garlic (if using), and carrots in a large mixing bowl.
  2. Sprinkle the salt over the vegetables and let sit for a few hours or overnight to draw out moisture.
  3. Drain the vegetables and rinse thoroughly to remove excess salt.
  4. In a large pot, combine sugar, vinegar, and turmeric. Bring to a boil, stirring until sugar dissolves.
  5. Add the drained vegetables to the boiling vinegar mixture and simmer for about 10-15 minutes until tender.
  6. Transfer the hot mixture into sterilized jars and seal.
  7. Let the pickles sit for at least 24 hours before tasting to allow flavors to meld.
