Ingredients

  • 1 1/2 lb. ground chuck
  • 1 (15 oz.) can tomato sauce
  • 1/2 c. milk
  • 1 egg
  • 24 cracker squares
  • 1/4 c. finely chopped celery
  • 3/4 c. finely chopped onion
  • 1/4 to 1/2 c. finely chopped green pepper
  • 1/2 c. cooked rice
  • 1 1/4 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  1. Mix tomato sauce, milk, and egg into the ground chuck.
  2. Add the crushed crackers, chopped celery, onion, green pepper (if using), cooked rice, salt, and black pepper.
  3. Combine all ingredients thoroughly and add more cracker crumbs if the mixture is too wet.
  4. Shape the mixture into a loaf.
  5. Bake at 350°F, covered, for about 1 hour or slightly longer.
  6. Uncover and bake for an additional 10 to 15 minutes until browned and cooked through.
