Ingredients

  • 5 lb. veal, cut into 1-inch cubes
  • 4 lb. pork
  • 8 oz. flour
  • 3 Tbsp. salt
  • 3 eggs
  • 1 c. water or milk
  • 12 oz. fine bread crumbs
  • 1 lb. fat

Instructions

  1. Thread the veal and pork cubes onto skewers, preparing approximately 30 skewers in total.
  2. In a bowl, beat the eggs and mix with water or milk.
  3. Combine the flour, salt, and bread crumbs in separate shallow dishes.
  4. Dip each skewer into the flour mixture, then the egg wash, and finally coat with bread crumbs.
  5. Heat fat in a deep skillet or fryer to 350°F (175°C).
  6. Fry the skewers in hot fat until golden brown and cooked through, about 15-20 minutes.
  7. Remove from oil and drain on paper towels before serving hot.
