Ingredients

  • 4 cups diced or cubed apples
  • 2 cups sugar
  • 1 cup coarsely chopped nuts
  • 3 cups flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 teaspoons soda
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs

Instructions

  1. Mix diced apples, sugar, and chopped nuts together; let stand for 1 hour.
  2. Sift flour, cinnamon, nutmeg, salt, and soda together.
  3. Add the sifted dry ingredients alternately with oil, vanilla, and beaten eggs to the apple mixture.
  4. Pour batter into a tube pan.
  5. Bake at 350°F (175°C) for 1 hour and 15 minutes.
  6. Wrap in aluminum foil to keep moist.
