Ingredients

  • 1/2 cup shortening
  • 1/3 cup sugar
  • 1 egg
  • 2/3 cup molasses
  • 2 3/4 cups sifted flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1 cup mincemeat

Instructions

  1. Cream the shortening with sugar until light and fluffy.
  2. Add the egg and molasses; beat well until combined.
  3. Sift together the flour, baking powder, salt, ginger, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, beating well after each addition.
  5. Wrap the dough in waxed paper and chill in the refrigerator for at least 1 hour.
  6. Roll out the chilled dough to about 1/8-inch thickness on a lightly floured surface.
  7. Cut dough into rounds about 2 inches in diameter using a cookie cutter.
  8. On the bottom half of each cookie, place about 1 teaspoon of mincemeat filling, including some of its liquid.
  9. Slash the top of each cookie to about 1/4 inch from the edges to create a vent.
  10. Fold the top over the filling to cover it, pressing gently to seal.
  11. Bake at 375°F (190°C) for approximately 10 minutes or until lightly browned.
