- Cream the shortening with sugar until light and fluffy.
- Add the egg and molasses; beat well until combined.

- Wrap the dough in waxed paper and chill in the refrigerator for at least 1 hour.
- Roll out the chilled dough to about 1/8-inch thickness on a lightly floured surface.
- Cut dough into rounds about 2 inches in diameter using a cookie cutter.
- On the bottom half of each cookie, place about 1 teaspoon of mincemeat filling, including some of its liquid.
- Slash the top of each cookie to about 1/4 inch from the edges to create a vent.
- Fold the top over the filling to cover it, pressing gently to seal.
- Bake at 375°F (190°C) for approximately 10 minutes or until lightly browned.
