Ingredients

  • 3 oz. lemon gelatin
  • 1 1/2 c. hot water
  • 3/4 c. beet liquid
  • 1/4 tsp. salt
  • 2 to 3 Tbsp. vinegar
  • 4 drops Tabasco
  • 1 tsp. horseradish
  • 1 tsp. Worcestershire
  • 1 1/2 tsp. onion, grated
  • 1 1/2 c. beets, diced

Instructions

  1. Dissolve the lemon gelatin in hot water.
  2. Mix in beet liquid, salt, vinegar, Tabasco, horseradish, Worcestershire, and grated onion.
  3. Chill until partially set.
  4. Add diced beets to the gelatin mixture.
  5. Chill until the aspic is firm.
  6. Unmold and serve.
