Ingredients

  • 3 Tbsp. oil
  • 2 c. chopped onion
  • 2 tsp. dried dill
  • 1 tsp. dried thyme
  • 1 medium head cauliflower
  • 6 c. stock or water
  • 4 c. diced, unpeeled potatoes
  • 4 bay leaves
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. tamari (soy)
  • 1 c. heavy or whipping cream
  • 4 Tbsp. flour
  • 1/2 c. parsley

Instructions

  1. Saute onion, dill, and thyme in oil until fragrant.
  2. Add cauliflower, diced potatoes, and stock to the pot.
  3. Cover and cook until vegetables are tender, about 30 minutes.
  4. Remove from heat and blend the mixture in batches until smooth.
  5. Pour the blended soup back into the pot after each batch.
  6. Stir in heavy cream, tamari, salt, and pepper.
  7. Heat through and serve garnished with parsley.
