Ingredients

  • 6 oz. pkg. orange jello
  • 1/3 cup sugar
  • 2 cups unsweetened orange juice
  • 1 teaspoon finely minced lemon peel
  • 2 cups buttermilk
  • 8 oz. can crushed pineapple
  • 1 cup chopped peaches
  • 1 cup fresh or frozen unsweetened blueberries
  • 1 cup dairy sour cream

Instructions

  1. Combine orange jello and sugar in a bowl; stir in 2 cups orange juice and lemon peel.
  2. Heat until jello is well dissolved.
  3. Remove from heat and cool to room temperature.
  4. Stir in buttermilk.
  5. Chill until partially set; fold in crushed pineapple, chopped peaches, blueberries.
  6. Pour into a 6 1/2 cup mold and chill until firm.
  7. In a separate bowl, combine sour cream and 1/4 cup orange juice. Cover and keep chilled.
  8. Unmold salad onto a plate of lettuce at serving time.
  9. Serve with sour cream dressing if desired.
