Ingredients

  • 1 can fruit cocktail, drained
  • 3/4 cup liquid from fruit cocktail
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 unbeaten egg
  • 1 1/4 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 3/4 cup firmly packed brown sugar
  • 3/4 cup chopped nuts
  • whipped cream

Instructions

  1. Mix the drained fruit cocktail, liquid from the fruit cocktail, sugar, vanilla, and unbeaten egg until combined.
  2. Add the flour, baking soda, and salt; mix until just moist. Do not overmix.
  3. Pour the batter into a buttered 8-inch square pan.
  4. Sprinkle the brown sugar and chopped nuts evenly over the top.
  5. Bake at 350°F (175°C) for 30 to 40 minutes until golden brown and a toothpick inserted in the center comes out clean.
  6. Serve warm with whipped cream.
