Ingredients

  • 3 to 3 1/2 lb beef stew meat
  • 1 medium onion
  • 6 to 8 large potatoes
  • 1 can cream of mushroom soup
  • 8 oz sour cream
  • 1 1/4 cups milk
  • salt and pepper
  • 8 oz shredded Cheddar cheese
  • 1 small box cornflakes

Instructions

  1. Preheat the oven and prepare an oblong casserole dish.
  2. In a large skillet, brown the beef stew meat until cooked through; set aside.
  3. Slice the onion and peel and slice the potatoes as if for frying.
  4. In a mixing bowl, combine the cream of mushroom soup, sour cream, and milk.
  5. Add salt and pepper to taste, then stir in the cooked beef, sliced onions, and potatoes.
  6. Pour the mixture into the prepared casserole dish.
  7. Top with shredded Cheddar cheese and crushed cornflakes.
  8. Bake in the preheated oven for approximately 1 to 2 hours until bubbly and golden on top.
