Ingredients

  • 1 1/2 cups brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 1 cup sour milk
  • 1 1/2 cups rhubarb, cut fine
  • 2 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Mix brown sugar, shortening, egg, and sour milk together as for a cake batter.
  3. Stir in the flour, soda, salt, and finely chopped rhubarb until well combined.
  4. Pour the batter into a greased 9x13 inch cake pan.
  5. Sprinkle 1/2 cup sugar and 1 teaspoon cinnamon evenly over the top of the batter.
  6. Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
