Ingredients

  • 6 pieces bacon
  • 1/3 onion
  • 1 celery stalk
  • 1/3 green or red pepper
  • 1 can (16 oz.) tomatoes
  • 1 cup instant rice
  • 1/2 teaspoon chili powder
  • water (total 1 cup including tomato juice)
  • shredded Cheddar cheese

Instructions

  1. Fry bacon strips until crispy; drain most of the grease.
  2. Saute chopped onions in the bacon grease for a few minutes.
  3. Add chopped peppers and celery; cook briefly.
  4. Pour in the can of tomatoes and water; bring to a boil.
  5. Add chili powder to the boiling mixture.
  6. Stir in the instant rice, cover, and let stand for 5 minutes.
  7. Sprinkle shredded Cheddar cheese on top and cover until melted.
