Ingredients

  • 2 (16 oz.) cans mixed vegetables, drained
  • 1/2 cup finely chopped onion
  • 1 cup Velveeta cheese, cubed
  • 3/4 cup mayonnaise
  • 1 tube Ritz crackers, crushed
  • 1 stick margarine, melted

Instructions

  1. Mix the drained mixed vegetables, chopped onion, Velveeta cheese cubes, and mayonnaise in a casserole dish.
  2. Melt the margarine.
  3. Add the crushed Ritz crackers to the melted margarine and stir to combine.
  4. Top the casserole with the Ritz cracker mixture.
  5. Bake in a 350°F oven for 35 to 45 minutes, until the casserole is brown and bubbly.
