Ingredients

  • 2 egg whites
  • 1/4 cup olive oil
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 cups white sugar
  • 1 1/2 cups skim milk
  • 3 teaspoons baking powder
  • 2 cups flour

Instructions

  1. Combine egg whites, sugar, and oil in a bowl.
  2. Beat well with a spoon until mixture is smooth.
  3. Add milk alternately with 1 cup of flour, baking powder, and salt, using a triple sieve.
  4. Add the remaining 1 cup of flour; stir and beat with an electric mixer.
  5. Spray and line a 9 x 13-inch pan with parchment paper or waxed paper.
  6. Fold the batter into the prepared pan using a spatula.
  7. Bake at 325°F for 40 to 45 minutes or until done.
  8. Top with your favorite topping before serving.
