Ingredients

  • 2 large eggs whites
  • 1 1/2 cups white sugar
  • 1/4 cup canola oil
  • 1 1/2 cups skim milk
  • 1 teaspoon vanilla
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups flour

Instructions

  1. Combine egg whites, sugar, and oil; beat well with a spoon.
  2. Add milk, vanilla, baking powder, salt, and 1 cup of flour; mix thoroughly.
  3. Alternate adding milk and remaining flour until fully incorporated, then beat with electric beaters.
  4. Grease and line a 9 x 13-inch pan with parchment or wax paper.
  5. Fold the batter into the prepared pan using a rubber spatula.
  6. Bake at 325° to 330° for approximately 40 to 45 minutes or until done.
  7. Top with your favorite topping.
  8. Ideal for shortcakes also.
