Ingredients

  • 8 oz. macaroni
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 3 c. milk
  • 12 oz. Monterey Jack cheese
  • paprika

Instructions

  1. Cook macaroni according to package instructions; drain.
  2. In a saucepan over low heat, melt butter.
  3. Stir in flour until smooth.
  4. Off heat, stir in milk, keeping mixture smooth.
  5. Cook over moderate heat, stirring constantly, until thickened and boiling.
  6. Spread half of the cooked macaroni over the bottom of a buttered 2-quart baking dish.
  7. Sprinkle with half of the cheese.
  8. Layer with remaining macaroni.
  9. Sprinkle with remaining cheese.
  10. Pour hot cheese sauce evenly over the top.
  11. Sprinkle with paprika.
