Morcon (Stuffed Steak)

Ingredients

  • 1 1/2 lb. sirloin steak, cut 1/4-inch thick
  • 1/4 c. vinegar
  • 2 cloves garlic, minced
  • 3/4 tsp. pepper (black)
  • 1/2 lb. ham, cut into julienne strips
  • 2 sliced sausages (pepperoni or chorizo)
  • 2 hard-cooked eggs, sliced
  • 1/2 c. chopped green olives
  • 1 c. oil
  • 1 c. chopped onions
  • 1 bay leaf
  • 2 c. water
  • 1 c. tomato sauce
  • 2 tsp. salt
  • 2 tomatoes, diced

Instructions

  1. Pound steak as thin as possible between wax paper.
  2. Marinate in vinegar, mixed with garlic and black pepper for 30 minutes; reserve marinade.
