Ingredients
- 1 can black beans (drained) ⓘ
- 3 large tomatoes (diced) ⓘ
- 1 vidalia onion (diced) ⓘ
- 1 can green chili ⓘ
- 1/4 cup fresh shredded ginger ⓘ
- 1/2 cup olive oil ⓘ
- 1/2 cup balsamic vinegar ⓘ
- 1/4 cup finely chopped garlic
- 1/2 cup finely chopped cilantro ⓘ
- 1 medium cucumber (peeled,chopped, and pureed) ⓘ
- 1/2 cup sweet corn ⓘ
- salt and pepper ⓘ
Instructions
- combine all ingredients and chill.
