Mother'S Cornbread

Ingredients

  • 3 cups Aunt Jemima self-rising cornmeal
  • 4 tablespoons flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 cups buttermilk
  • 1/2 teaspoon soda
  • 6 tablespoons bacon grease

Instructions

  1. Mix dry ingredients, except for soda.
  2. Add soda to buttermilk and stir together with dry ingredients.
  3. Heat bacon grease in a large iron skillet or heavy pan until hot.
  4. Stir about half of the bacon grease into the batter.
  5. Pour the batter into the hot skillet with the remaining bacon grease in it.
  6. Bake for about 25 minutes at 450°F until golden brown and cooked through.
