Mother'S Oatmeal Bread
A hearty, sweet oat loaf with a buttery crust, perfect for breakfast or a snack, combining wholesome oats and a touch of brown sugar for natural sweetness.

Instructions
- Stir together boiling water, rolled oats, shortening, brown sugar, and salt in a large mixer bowl.
- Cool to lukewarm, then dissolve dry yeast in warm water and add to the mixture along with eggs and half of the flour.
- Beat at medium speed for 2 minutes or 300 vigorous strokes by hand, scraping the sides and bottom of the bowl frequently.
- Add the remaining flour and mix with a spoon until the flour is thoroughly blended into the dough.
- Knead until the dough is smooth, elastic, and no longer sticky.
- Cover the dough and let it rise until doubled in size.
- Punch down the dough, shape it into three loaves, and place each loaf in a greased pan.
- Cover the loaves again and let rise until doubled in size
- ,Bake the loaves for 40 to 45 minutes at 350°F.
- When baked, brush the tops with butter.
