A hearty, sweet oat loaf with a buttery crust, perfect for breakfast or a snack, combining wholesome oats and a touch of brown sugar for natural sweetness.

Ingredients

  • 2 1/4 c. boiling water
  • 1 1/2 c. rolled oats
  • 1/2 c. shortening
  • 3/4 c. brown sugar
  • 3 tsp. salt
  • 3/4 c. warm water
  • 2 pkg. dry yeast
  • 3 eggs
  • approximately 8 c. flour

Instructions

  1. Stir together boiling water, rolled oats, shortening, brown sugar, and salt in a large mixer bowl.
  2. Cool to lukewarm, then dissolve dry yeast in warm water and add to the mixture along with eggs and half of the flour.
  3. Beat at medium speed for 2 minutes or 300 vigorous strokes by hand, scraping the sides and bottom of the bowl frequently.
  4. Add the remaining flour and mix with a spoon until the flour is thoroughly blended into the dough.
  5. Knead until the dough is smooth, elastic, and no longer sticky.
  6. Cover the dough and let it rise until doubled in size.
  7. Punch down the dough, shape it into three loaves, and place each loaf in a greased pan.
  8. Cover the loaves again and let rise until doubled in size
  9. ,Bake the loaves for 40 to 45 minutes at 350°F.
  10. When baked, brush the tops with butter.
